This rich stew is delicious and belly-filling.
The perfect balance between sweet and spicy is created by balancing the savoury umami taste of Sari Foods Non-fortified Nutritional Yeast with sweet spices and medjool dates.
Over at Sari Foods HQ, this is what we call a good & easy entertaining dish - especially for al fresco dining on a warm summers evening. Simply throw all the ingredients in to the pot one by one and then leave it to itself while you relax with your guests. When ready, dish up and enjoy - along with the satisfying sound of yummy noises coming from those at the dinner table!
2 large onions
2 tbsp sunflower oil
3 garlic cloves
1 tsp freshly ground black pepper
1 tsp ground turmeric
3/4 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp saffron
1 bay leaf
2 heaping tbsp Sari Foods Non-fortified Nutritional Yeast
120g red lentils
400g tinned chickpeas
1 can chopped tomatoes
1 liter vegetable stock
3/4 cup brown whole grain rice
small bunch fresh chopped parsley
large bunch fresh chopped coriander
chopped medjool dates
Heat the oil in a large pan over a medium heat. Add the onions and cook until golden. Turn the heat down to medium-low and add the garlic, pepper, turmeric, cinnamon and ginger and allow to sauté for a couple of minutes.
Add the red lentils, chickpeas, saffron, tomatoes, parsley and half the coriander. Cook over a low heat for 15 minutes.
In the mean time, deseed your squash and cut in to chunks. Add to the pan with the stock and bay leaf and simmer gently for 20 minutes.
Finally, add the rice and continue to simmer until cooked through. Stir in Sari Foods Non-fortified Nutritional Yeast and serve immediately.
Serve scattered with the remaining coriander, a dollop of coconut yoghurt and a few dates!
