There are certain foods that lend themselves to being eaten in bright sunshine on a hot summers afternoon and seasonal blackcurrants are one of them.
So easy to grow, a blackcurrant bush in your garden requires minimal attention but reaps a bountiful reward come the early summer months. Tart when picked straight from the plant, their satisfying flavor is released when cooked but along with taste, also comes their rich antioxidant offerings.
This compote combines the humble blackcurrant and its health benefits with Sari Foods Natural Vitamin C Powder from Acerola Cherries in a Vitamin C boosting sweet treat perfect for stirring through dairy free coconut yoghurt.
4 tbsp raw sugar or honey
1 heaping tbsp Sari Foods Natural Vitamin C powder from Acerola Cherries
Remove any leaves or stems from the blackcurrants. Put the the fruit in a stainless steel saucepan with the sugar or honey and bring it slowly to the boil. You shouldn't need any water, but if the fruit looks as if it is starting to stick, then add a tablespoon or two of water. When the fruit starts to burst, remove from the heat and allow to cool. Once cool, stir through the acerola cherry powder.
This compote is a great accompaniment to dairy free yoghurt or ice cream and sprinkled with chopped nuts, seeds or granola.
