One of the best ways to enjoy Sari Foods Non-fortified Nutritional Yeast is in a salad dressing. It's easy to incorporate and adds flavor and nutrition to your dish.
This squash and barley balsamic salad is an old favorite that often makes an appearance at socials and family gatherings and every time without fail, people ask "What is in this? Its so good!" - it's that kinda dish. So in typical Sari Foods community spirit we're sharing the love.
Ingredients: Serves 6-8
1 butternut squash peeled and cut in to long pieces
250g hulled barley
300g tenderstem broccoli
100g sunblushed tomatoes (sliced)
1 red onion
1 tbsp capers
2 tbsp mixed seeds
20 black olives
1 big bunch chopped basil
5 tbsp balsamic vinegar
6 tbsp olive oil
1 tbsp dijon mustard
1 garlic clove finely chopped
First, put the hulled barley in to a pan and cover with water. Bring to the boil and then reduce the heat to a simmer. Cover the pan and cook the barley for around 45 minutes or until it has tripled in volume and is soft yet chewy
Next toss the butternut squash in some olive oil and roast in the over for around 30 minutes until its tender and golden.
Then put the tender stem broccoli in a steamer and steam for 2-3 minutes only so it still retains its texture.
Finely chop the red onion and put it in a large bowl. Add the sun blushed tomatoes, capers, seeds, olives and chopped basil.
Once the barley, squash and broccoli are cooked, also add them to the bowl.
Make the salad dressing by combining all the ingredients and whisking to mix well. Pour over the salad and give everything a good stir before serving.
