Our particular fondness for this cool, comforting treat has been transformed into a healthy option so you can feel great about eating every single scoop. And better still, it's super easy to make and only requires 5 ingredients!
Our favorite thing about this dish (if we had to choose just one) is that it calls for turmeric. Full of antioxidants and nature-made nutrients, turmeric is one healthful spice, and we want to experience its benefits daily. BUT, with outside temperatures rising, it can be challenging to get your daily dose without consuming the warm, savory dishes you'd typically associate with turmeric.
Well... where there's a will, there's a way! Turmeric is an incredibly versatile ingredient and adding turmeric to this recipe balances the natural sweetness of the mango, and creaminess of the coconut milk.
You will need:
- 3 cups mango, frozen
- 1/2 cup coconut cream
- 1 tbsp coconut oil
- 1 tbsp Sari Foods Organic Turmeric Powder
- 1 cup coconut milk
- Place all the ingredients in a high speed blender and blend until smooth and everything is well combined.
- Pour into a glass container and secure lid. Place in the freezer for 2-3 hours. If you are leaving the ice cream in the freezer overnight or for a few days before consuming, take the ice cream out of the freezer for 30 minutes before serving. This will allow you to easily scoop the ice cream into a dish.
- Add your chosen toppings (optional). We used desiccated coconut and walnuts for that essential crunch!
