Creamy Chia Superfood Pudding with Acacia Fiber

These delicious layered chia pudding pies are chock full of wholesome goodness and sweet, fruity flavor. And since you can prepare this recipe a day ahead, you’ll wake to a no fuss breakfast treat when you open the fridge. Just layer on your favorite fruit and you’re good to go!
Chia seeds have an amazing ability to absorb liquid, working their magic overnight to transform almond milk and fresh fruit into a rich, chilled pudding. Acacia powder adds additional creaminess and prebiotic fiber to create a pretty parfait that might just make breakfast your favorite meal of the day. This recipe makes enough for two so you can share the yum with someone you love—or save the rest for another meal.
Ingredients:
- 1 banana
- ¾ cup almond milk, unsweetened
- 2 Tbsp chia seeds
- ½ cup pineapple chunks
- 1 Tbsp Sari Foods Organic Acacia Fiber Powder
Directions:
- Process all ingredients in a blender until smooth and well combined.
- Transfer mixture in a jar with a secure lid and refrigerate overnight, allowing the mixture to thicken.
- To make the pudding parfaits, spoon a little of the mixture into 2 glasses and layer with your favorite fruit (we used strawberries and pineapple). Top with the remaining chia mixture and finish with a sprinkle of desiccated coconut or your favorite nuts.
Recipe Tip! The trick to getting really creamy pudding is to allow the blended chia mixture to set overnight (or for at least a few hours) to thicken up.
