This oh so good raw very berry cheesecake will truly tantalize your tastebuds.
With its dairy free, gluten free, refined sugar free status it will seriously blow your mind with its real berry burst taste explosion and healthy goodness! It really is a true demonstration of how a raw, plant-based diet does not have to mean that you miss out on a thing and here at Sari Foods headquarters we're already drooling over the thought of making it again. Its full of nutrients, vitamins, minerals, protein and healthy fats, as well as giving you an incredible Vitamin C boost from the addition of Sari Foods Organic Acerola Cherry Powder.
Enough talk, you just have to try these.
For the base:
1 cup raw almonds
3tbsp coconut oil (melted)
3/4 cup of dates
For the middle layer:
2 cups of raw cashew Nuts (soaked overnight)
1/3 cup maple syrup
1/2 cup coconut oil (melted)
juice of 1 lemon
For the top layer:
2/3 cup of mixed berries (we used strawberries, raspberries and blueberries)
1/2 cup frozen cherries
2 heaping tablespoons Sari Foods Natural Vitamin C Powder from Acerola Cherries
First you need to soak your cashews. Place them in a bowl, cover with water and leave to soak overnight.
Next, prepare a medium sized dish by lining it with baking parchment. Also make sure that you have some space in the freezer because you'll need to add the dish to the freezer after each stage to allow that layer to set while you make the next layer.
Once you've made all these preparations, add all the ingredients for the base to a food processor and mix well. What you're looking for is an evenly mixed, crumbly texture.
When this is done, tip your base mix in to your pre-prepared dish and use a spoon (or your hand) to spread the base evenly and firmly. Place the dish in the freezer while you make the next stage.
Drain and rinse your soaked cashews and add to the food processor with the lemon juice, coconut oil and maple syrup. This time you want to achieve a smooth, creamy mixture - you may need to stop and scrape the sides of the jug down.
Take your base out of the freezer and add 3/4 of the middle layers mix to the dish, again spreading and smoothing with a spoon before placing the dish back inside the freezer.
With the remaining 1/4 cashew mix in the food processor, add all the berries & cherries as well as the Sari Foods Natural Vitamin C Powder from Acerola Cherries. Blend again until you have a smooth, creamy consistency.
Add this final layer to the rest of the dish in the freezer and spread evenly across to form the surface. Now that all the layers are complete, place the whole dish back in the freezer to set for a couple of hours (giving you time to clear up, make a hot drink and sit in anticipation of what is to come). You want to make sure that the cheesecake is firm but not frozen solid when you cut it in to squares otherwise it can get kinda messy.... It otherwise keeps in the freezer for around a month so is a great desert to make in advance! Just give it 30 minutes thawing time before serving.
