This is one of the simplest and most nourishing recipes - perfect for a chilly winter evening. It really is a big hug in a bowl.
Its flavour is totally enhanced by the addition of the Sari Foods Non-Fortified Nutritional Yeast (what isn't??), it provides an excellent source of both protein (a complete, bioavailable and vegan source) and fiber and contains all 18 amino acids and a multitude of different minerals (including iron, selenium and zinc) as well as a natural vitamin B-complex and Beta-glucans (known for their extreme immune enhancing properties plus their ability to lower bad cholesterol). This dish is just so easy to make and is a great option if you're feeding lots of people as you can just multiply the ingredients. Plus, you can freeze any extra batches for another day!
Ingredients - serves 6
1 green pepper
2 sticks celery
200g sweet potato
100g butternut squash
2 garlic cloves
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon hot chilli powder
1 teaspoon cinnamon
2x 400g cans mixed beans
2x 400g cans chopped tomatoes
3 tablespoons Sari Foods Non-Fortified Nutritional Yeast
a large handful of coriander
Finely chop all your veg and the garlic.
Heat the oil in a large pan and add the chopped vegetables. Cook for about 10 minutes, stirring regularly, until the veggies start to soften. Add the spices and some seasoning and cook for a further minute to allow their flavours to release.
Next, add the mixed beans and chopped tomatoes, stirring to combine. Partially cover the pan and allow to simmer for 30 minutes, until all the vegetables are tender. Loosen with a splash of water if needed and stir in the Nutritional yeast.
Dish up in to warm bowls, top with the coriander and avocado and serve with the tortilla chips. It's as simple as that - enjoy!
