Apple pie, but make it breakfast
These breakfast cookies taste like apple pie and every cozy fall flavour. Vegan, refined-sugar free, and packed with fiber thanks to one heaping spoon of acacia fiber. One bowl, 15 minutes in the oven, 8 cookies.

You'll need
| 1 ripe banana, mashed |
| 1 cup rolled oats |
| 2 tbsp almond butter |
| 1 tbsp maple syrup |
| 1 heaping tbsp Sari Foods Acacia Fiber |
| 1 tsp cinnamon |
| ½ tsp baking powder |
| ½ tsp vanilla extract |
| Pinch of salt |
| 1 small apple, finely diced |

Let's bake

Preheat the oven to 350°F. |

Mash the banana in a large bowl. Stir in the oats, almond butter, maple syrup and acacia fiber. |

Add the cinnamon, baking powder, vanilla and salt. |

Fold in the diced apple. |

Shape into 8 balls and bake 12 to 15 minutes. |

Let them cool, then enjoy. Or crumble one over a yogurt bowl. |
