The perfect Tuesday night dinner!
Easy to make and satisfying to the max. This dish beats a greasy, additive laden take-away any day. It not only wins on nutrition, cost and ease but also feel good factor - you'll be content in the knowledge that you are making the superior choice for your mental and physical wellbeing.
This healthified version of fried noodles is packed with nutrient-dense veggies, solid vegan protein (from tempeh and spirulina), and deliciously filling, fueling healthy fat (from coconut oil). This fat not only allows the noodles to become slightly crunchy like takeout, but it also signals fullness more quickly and helps that full feeling last longer.
1 tbsp + 1 tsp coconut oil, divided
1 small yellow onion, finely chopped
2 cloves garlic, minced
2" piece of fresh ginger, peeled and finely chopped
1 cup of tempeh, cubed
1 1/2 tbsp tamari
1 tsp sesame seeds
2 loosely packed cups bok choy, large stems removed
2 1/4 cups cooked rice noodles
1 tsp Sari Foods Organic Spirulina
Start by chopping up your veggies and having everything set to go.
Cube your tempeh and combine in a bowl with the tamari and sesame seeds. Stir to coat the tempeh entirely, then set the bowl aside.
Heat the coconut oil in a large frying pan over medium-high heat. Once melted, toss in your onion, garlic and ginger. Sautee for about 2 minutes until soft and fragrant.
Add your tempeh. Stir to combine everything and cook for a couple of minutes until the tempeh starts to brown. Add 1/2 tbsp water and use your spatula to move things around and reabsorb the sauce.
Once the tempeh is nicely browned, turn the heat down a tad and add your bok choy. Stir consistently for a minute until the bok choy is well incorporated and starting to wilt.
Add your cooked rice noodle, Sari Foods Organic Spirulina and 1 tsp more coconut oil. Allow the oil to melt on the bottom of the pan and then gently sautee everything for at least another minute. Aim to heat everything all the way through, with ingredients appearing evenly combined.
Remove from heat and garnish with chopped cilantro if you wish.
Break out the chopsticks and enjoy!
