Supergreen Spirulina Quinoa Risotto
Who says spirulina is just for smoothies? While this nutritious green algae is the perfect addition to a super green smoothie (or any smoothie actually!), it tastes great in savory dishes, too—which is why we’ve created this super green vegan quinoa risotto.
Our flavorful risotto recipe uses brown rice because it’s an unrefined whole grain with more fiber and nutrients than the traditional arborio variety.
We’ve also included delicious quinoa for additional fiber, protein, and B vitamins, along with Sari Foods Organic Spirulina Powder for a whole army of nutrients in a single dish. This recipe serves two, so there’s plenty of creamy goodness to share with a friend.
Ingredients:
- 1 small onion, diced
- 4 garlic cloves, finely chopped
- ⅓ cup dry quinoa, rinsed
- ⅓ cup dry brown rice, rinsed
- 1 tsp dried oregano
- 1 tsp dried basil
- ¼ tsp ground black pepper
- 2 tsp Sari Foods Organic Spirulina Powder
- 2½ cups vegetable stock
- 2 tsp Sari Foods Non-Fortified Nutritional Yeast Flakes
Directions:
- Sauté onion and garlic for two minutes on a low heat, then add the rinsed quinoa and brown rice.
- Stir to combine, then add oregano, spirulina, dried basil, and 2 cups of vegetable stock.
- Reduce heat and simmer until the rice and quinoa are cooked and the water is absorbed (this should take approx. 20 minutes).
- Add nutritional yeast and the remaining ½ cup vegetable stock. Cook until absorbed and season to taste.
- Serve and enjoy! I like to serve mine with fresh basil and an extra dusting of nooch!
