Almond Butter and Acai Jelly Bagel

Just about everyone loves peanut butter and jelly! So much in fact, that the average American will have eaten over 2,000 peanut butter and jelly sandwiches by the time they graduate from high school. That’s why we’ve decided to share our take on this old school classic—and sprinkle in a touch of superfood love. 

For a healthy twist, we use homemade almond-chia butter instead of peanut butter—and our truly scrumptious acai-grape jelly brings a whole new level of sophistication to a well-loved traditional favorite. Sweet, creamy, salty, and crunchy, this bagel is a sure fire recipe for happiness on a plate.

Directions:

  1. Make the acai jelly first by pureeing all jelly ingredients in a blender until well combined. Pour jelly into a jar and place in the fridge, preferably overnight, to allow the mixture to thicken. 
  2. Arrange almonds on a baking tray. Bake for 8-10 minutes, and set aside to cool. 
  3. Place almonds, chia seeds, oil, and maca into a high speed blender and process until mixture is smooth. Add a little water if you prefer a thinner consistency. 
  4. Halve your favorite bagel, spread one side with the nut butter mixture, top with acai jelly and pop the other half of the bagel on top.
