Massaged kale we hear you ask? Yep. You heard correctly, massaged kale. Why on earth would you massage your kale...?? Because it tastes blinking delicious when you do.
Kale is super good for you; high in fiber, iron, vitamins K, A, C, calcium and various antioxidants... it follows the basic rule of thumb: green + leafy = good. You don't really need us to reiterate what every other health advocate is saying... so go ahead, jump on this back rubbing kale bandwagon and load your plate up!
Giving your kale a little massage before dishing it up basically starts the process of breaking it down to make it more easy to digest. Think of it in this way, digestion starts in your mouth and kale has a very rough texture, which takes a lot of chewing. Massaging prior to eating is kinda like pre-digestion so give your kale some love, go ahead! Your jaws and tummy will thank you.
And don't forget the secret ingredient: Sari Foods Non-fortified Nutritional Yeast!
- 2 heavy handfuls (2-3 cups) of organic raw kale leaves
- 2 dsp olive oil
- 1 tsp Apple cider vinegar
- 1 heaping tbsp Sari Foods Non-fortified Nutritional Yeast
- a pinch of dried chilli flakes (or more if you like)
- a pinch of ground black pepper
- 1 large carrot grated
- 2 tbsp chopped chervil
- 1 clove chopped garlic
Prepare your kale by removing the stalks and slicing thinly. Place in a bowl while you make your dressing.
Make the dressing by combining the olive oil, apple cider vinegar, Sari Foods Non-fortified Nutritional Yeast, chilli flakes, black pepper, grated carrot, chervil and chopped garlic and whisking well.
Pour the dressing onto the kale and begin the massage! Rub the kale gently between your thumb and fingers for around 5 minutes when the kale should begin to wilt and is well covered in the dressing.
You can use this as a complete meal or add to it. We love ours drizzled with tahini and spicy chilli seeds sprinkled on top!
