Independence Day Vegan Berry Pots
Independence day brings sunny days, balmy nights, magical fireworks, and all kinds of wonderful party foods. Our patriotic red, white, and blue berry pots let you celebrate this joyful holiday in style, without any synthetic colors or dyes.
The perfect dessert for a hot summer night, this refreshing, vegan-friendly recipe is as good for you as it looks and tastes. Berries provide vibrant color and natural sweetness, while the coconut yogurt adds a touch of smooth, creamy yum. This recipe makes enough for two, but can be easily doubled to serve larger groups. Who knew red, white, and blue could be so delicious?
Ingredients:
Red Layer
- 1 cup frozen raspberries
- 1 cup fresh strawberries
- 1 tsp Sari Foods Organic Vitamin C Powder
- 1 tsp Sari Foods Organic Acai Powder
- 3 Tbsp coconut water
White Layer
- 4 heaping Tbsp organic coconut yogurt
Blue Layer
- 1 cup blueberries
Directions:
- Place red layer ingredients in a blender and process until smooth. Decant half of the mixture into two glasses or pots, dividing equally. If you find the mixture is a little runny, place it in the freezer for 30 minutes to achieve a thicker consistency and more defined layers.
- Spoon 2 Tbsp of yogurt on top of the red layer in each glass, and use the remaining red mixture to create the top layer.
- Top with blueberries and enjoy!
