It's so hard to find good, honestly healthy snack bars right? More often than not, they have 'hidden' ingredients and you end up consuming a hole bunch of stuff you'd rather avoid.
Well we have the answer. Make a batch of our Carob Spirulina Power bars and you have a go to healthy snack available for whenever the need arises. Great for travelling, this nutrient-packed snack has the perfect level of crunch with nuts, oats and seeds, plus crisp brown rice cereal. Carob powder adds chocolate flavor and Sari Foods Organic Spirulina contributes an army of plant-based nutrients, making these bars one powerful snack!
Makes 12 bars.
1/4 cup dried apricots
1 cup carob powder
pinch pink himalayan salt
1/2 cup whole raw flax seeds
1 cup whole raw pumpkin seeds
1 cup whole raw sunflower seeds
1 cup oats
1/2 cups crispy brown rice cereal or crisp rice cereal
1/2 cup raw honey
1 cup unsweetened almond butter
Line a large baking pan with parchment paper.
Add the dried apricots to a large food processor and pulse to create a paste. Remove the paste from the food processor and set aside.
Place the spirulina powder, carob powder, and sea salt in a large bowl. Add the oats, flax seeds, pumpkin seeds, sunflower seeds, and crispy rice cereal and mix well to combine
In a pan over low heat, melt the honey, almond butter, and reserved apricot paste and mix well for 2 to 3 to make sure the mixture is smooth and free of any lumps.
Remove the pot from the heat and allow to cool slightly. Gently fold in the seed mix making sure to incorporate but not crush all of the mixture.
Spoon and then gently press the mixture into the prepared baking pan, flattening to make even sized bars. Place the mix in the oven for 10 - 15 minutes.
Remove from the oven and allow to cool before cutting in to bars.
