A cross between bread pudding and mousse in consistency, this gooey cake is a sure fire way to prove that vegans do not miss out on a thing!
Ingredients: serves 6-8
2 cups ground almonds
2 heaping tbsp Sari Foods Acerola Cherry powder ½ cup / 50g unsweetened cocoa powder 1 tsp. baking soda ½ tsp. salt 1 cup / 250ml pure maple syrup 1 ¼ cup / 300ml almond milk 6 Tbsp. / 90ml melted coconut oil 2 tsp. pure vanilla extract
1tsp apple cider vinegar
4 fresh figs halved
1/2 cup hulled fresh cherries
Preheat the oven to 350ºF.
In the bottom of an oven proof dish, arrange the fig halves cut side facing up and scatter the cherries amongst the figs.
In a separate bowl, mix the rest of the ingredients together with a wooden spoon.
Pour the chocolate batter around the figs and cherries.
Place in the oven and bake for 50-60 minutes.
Serve with cashew cream or vegan ice cream - the choice is yours!
