During the winter we at Sari Foods tend to consume a lot of soup. The perfect way to warm up on a chilly day is with a bowl of something steaming hot and good for you right?
However, when the seasons start to change we like to mix it up a little and while we're not quite ready for a big plate of cool fresh salad, a warm salad is the perfect in-between.
This one combines sweet roasted carrots with the real savoury hit of Sari Foods Non-fortified Nutritional Yeast and a big dollop of creamy Sari Foods hummus to top it all off (recipe found here) - delicious!
Ingredients: Serves 2
For the salad
250g mixed colour carrots
350ml vegetable broth
2 handfuls mixed winter salad leaves (like treviso, arugala, radicchio or cavolo nero tops)
1 level tsp whole cumin seeds
1 level tsp dried chilli flakes
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
1 clove garlic
2 sprigs fresh thyme (leaves picked)
extra virgin olive oil
red wine vinegar
1 bunch fresh coriander
1tbsp toasted mixed seeds
For the dressing
juice of 1/2 orange
juice of 1/2 lemon
extra virgin olive oil
1 heaping tbsp Sari Foods Non-fortified Nutritional Yeast.
Start by preheating your oven to 350 degree fahrenheit.
Take the ends off your carrots and roughly slice in to thick slices/chunks.
In a pestle & mortar add the chilli flakes, cumin seeds, salt, pepper, garlic clove and thyme leaves. Smash them up until you have a kind of paste. Add enough extra virgin olive oil to generously cover the paste, and a good splash of vinegar. Add to a bowl with your carrots and toss together making sure all the carrots are coated. Add to a baking tray and roast in the oven for 30 minutes.
Meanwhile, prepare your salad dressing. Whisk together the orange juice, lemon juice and Sari Foods Non-fortified Nutritional Yeast and add an equal amount of oil.
Next, rinse your quinoa and place in a saucepan with the vegetable broth. Cover with water and bring to the boil before simmering for 15 minutes.
When the carrots are ready put them in a large serving bowl with the quinoa, winter leaves, avocado and coriander. Add the dressing and toss together to combine. Sprinkle with the toasted seeds before taking to the table along with a bowl of Sari Foods Hummus for people to help themselves - soul food!
