Buckwheat is a seed from a plant related to rhubarb and has a nutritional value to rival that of many other types of seed. It can be used more like a grain in cooking and tastes great in savoury or sweet dishes. It is gluten free, high in protein (especially essential amino acids) and also fiber making it a great option for those trying to eat healthier. You can substitute the buckwheat groats here for oats or rice or any alternative you like. As well as its nutritional value, the buckwheat adds a delicious nutty flavour and crunch which we love here at Sari Foods but the main focus of the dish is the Vitamin C hit, caramelised orchard fruits and pecans along with the deeply comforting cinnamon and vanilla flavoring - what you choose to make the body of your porridge with is really just the vehicle for all of this!
Ingredients: Serves 2
1/2 cup buckwheat groats
1 1/2 cups almond milk
1 tsp cinnamon
1 tsp vanilla extract
2 tbsp ground flax
1 handful raisins
1 grated apple
1 handful chopped pecans
2 tsp honey
1 tsp coconut oil
Place the buckwheat, flax, almond milk, cinnamon, vanilla, grated apple & raisins in a pan together over a medium-low heat. Cook for about 20-25 minutes stirring occasionally.
Quarter and core the fig and the pear. Put a frying pan on a medium-low heat and add the coconut oil. Once the oil has melted add the fig, pear and pecans to the pan. Make sure to turn these regularly so that they don't stick and to ensure that they caramelize on all sides.
After 20-25 minutes your buckwheat porridge should be looking thick and creamy. You can add more liquid if you prefer your porridge runnier. Once you're happy with the consistency remove from the pan from the heat.
By now, your fruit and nuts should also be done and looking golden, glowing and gloriously caramelized.
Before serving, stir the Sari Foods natural Vitamin C from Acerola Cherries Powder through the porridge and divide in to bowls. Top with the caramelized fruit and nut and drizzle over the honey.
