This is one mean green breakfast pudding. This is a great recipe pre-workout as Sari Foods Organic Spirulina provides you with a healthy dose of protein amongst other nutrients and the chia seeds are a great way to hydrate before hand. This recipe is for you slightly more advanced Spirulina takers as the flavor is definitely present so if you're just warming up, maybe leave this one to try next week. We love it though! Especially as Sari Foods Organic Spirulina has such a clean, fresh taste and it goes so well with the creamy coconut yoghurt and your choice of granola. Its also a great way to introduce kids to Spirulina, they go wild for this pudding - its so easy to eat!
At Sari Foods, we love having a hassle free breakfast ready and waiting for us in the morning and to be greeted by this beautiful blue/green coloured superfood is the best wake up call! This dish can be thrown together in just a couple minutes and is best made in advance (preferably the night before) so there is time for the chia to absorb the moisture from the milk and thicken up nicely. These tiny seeds are hydrophilic so soak up fluids to make a gooey textured pudding which is just so satisfying to eat. Its also totally adaptable so if your pudding looks too thin for your liking, you can add more chia seeds and let it sit for 30 minutes more; if it’s too thick, try adding a touch more coconut milk.

3 tbsp chia
1/2 tsp raw honey
1 cup coconut milk
Your choice of granola to top
The night before, combine the chia seeds, coconut milk, honey and Spirulina in a bowl and whisk with a fork until the Spirulina is incorporated and the chia seeds are all covered. Cover the bowl and leave in the fridge overnight (If you can't or you forgot, cover and leave for 30-60 minutes minimum - basically as long as you've got).
