Moroccan Chickpea & Squash Stew

There’s something about a rich, exotic stew that soothes the soul as satisfyingly as it fills the belly. This delicious Moroccan Chickpea and Squash Stew is no exception, offering your tastebuds the sweetness of fragrant spices and medjool dates perfectly balanced with the savory umami taste of Sari Foods Non-Fortified Nutritional Yeast.

At Sari Foods HQ, this is one of our favorites “good & easy” recipes for entertaining—especially for al fresco dining on a warm summer’s evening. Simply throw all the ingredients into the pot one by one, and then relax with your guests while it cooks. When the stew is ready, spoon into dishes and enjoy the flavor of faraway lands with no airplane ticket required!

Ingredients:

  • 2 large onions
  • 2 Tbsp sunflower oil
  • 3 garlic cloves
  • 1 tsp freshly ground black pepper
  • 1 tsp ground turmeric
  • ¾ tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp saffron 
  • 1 bay leaf
  • 2 heaping Tbsp Sari Foods Non-Fortified Nutritional Yeast
  • ½ cup red lentils
  • 3 ¼ cups tinned chickpeas
  • 1 can chopped tomatoes
  • 1 ¼ cups squash
  • 4 ¼ cups vegetable stock
  • ¾ cup brown whole grain rice 
  • Small bunch fresh chopped parsley
  • Large bunch fresh chopped coriander
  • Coconut yogurt
  • Chopped medjool dates

Directions:

  1. Heat the oil in a large pan over medium heat. Add the onions and cook until golden. 
  2. Turn the heat down to medium-low and add the garlic, pepper, turmeric, cinnamon, and ginger and sauté for a couple of minutes.
  3. Add the red lentils, chickpeas, saffron, tomatoes, parsley, and half the coriander. Cook over low heat for 15 minutes.
  4. In the meantime, deseed squash and cut into chunks. Add to the pan with the stock and bay leaf, and simmer gently for 20 minutes. 
  5. Add rice and continue to simmer until cooked through. Stir in Sari Foods Non-Fortified Nutritional Yeast and serve immediately, topped with a dollop of coconut yogurt and a sprinkling of chopped dates.
